In large part, cacao cultivation safeguards the traditional lifestyle of the Maya people. Details: Zotter hits it on the nose with their fragrance notes-- the chocolate's scent is ripe with the scent of freeze dried, mixed berries. On the tongue, this chocolate's flavor bursts with the acidity of fresh brewed coffee, aromatic mulch, and tangy Mexican crema. As the flavors crest, they present notes of Earthy mushrooms and brown toasted nuts, which descend softly into a gentle aftertaste of black tea tannins (Just like Zotter says). This chocolate is a kind, savory culinary adventure.
