Potomac 85% dark chocolate bar
Maker: Potomac Chocolate
Percentage: 85%
Origin: Upala, Costa Rica
Description: Pure, extra dark chocolate made from cacao grown by a collection of smallholder farmers, then fermented and dried by Nahua Cocoa in Upala, Costa Rica. Rich and earthy with notes of coffee and nuts.
MY REVIEW:
Rating: 8/10
Mouthfeel: Smooth, thick, enveloping
Flavor notes: Pastured cream, malt, hazelnut, pour over coffee, fudge
Details: This chocolate leads with an embrace of warm buttery velvet, which coats the tongue and lingers... gently. The flavor is wide and nuanced, with facets of lightly cultured dairy and mild roasted nuts. There's also an aromatic acidity that I've only experienced in fresh pour over coffee, made with abundant care from recently roasted, just-ground beans.
This dark chocolate bar is an absolute delight.
