Mouthfeel: Hard, melting, light

Flavor Notes: Sour cream, tart green apple, dried mushroom, orange zest, loam

Details: This bar has impressive structural integrity, and keeps its solid, cornered shape for a long while as it melts on the tongue.  As the bar melts, its sour and savory aromatics emerge slowly, and unfold into a deeply sumptuous interfusion of dry loam, orange zest, and dry button mushrooms. The combined depth and subtlety of this chocolate reminds me of a vegetal hors d'ouevre, expertly plated and served early in a formal French meal.
